Is there any "Cantonese Input Method" I can use with Ubuntu ???
I don't know how to type "Changjei" / "Quick"

Can't help, as you see I am only typing in Eng now XD

install iBus from Ubuntu Software Center(in case you don't have it),
then search "ibus quick", install the ibus-quick 3.
Then maybe restart(may not needed),
after that, Preference, Keyboard input methods,
go to the tab of "Input Method", see Chinese, quick 3, add.
Then you should see the iBus icon at the notification area, first active the windows you are typing(like you do in Windows), then click on that icon, select the input method and you are done.

I am using Ubuntu 10.4 x64 version
so far so good

Other than the stupid HP Multi-function Printer at office don't support Linux

(They do support Mac OSX

)

how do you input Chinese on ubuntu using methods other than quick/changjei?

我開左 Ubuntu 內置既 Ubuntu 軟體中心係入面search "Canton"
會有廣東話輸入法

你用倉頡/速成既話
都可以 search 到

安完 Reboot 一次 (或者唔駛 reboot , 重新啟動個輸入法工具就得)
開 iBus 係漢語度就會見到有廣東話可以 add

oic, I don't know how to use this method(Cantonese) ar

I should spend sometimes at least learn quick later
